Simple Cream Scone Recipe

Friends, I'm not overstating things when I tell you that this simple cream scone recipe changed my life.



I'm not one of those moms who has a passion for cooking or baking... in fact, I honestly want to be in the kitchen as little as possible, while still eating delicious things. A bit ridiculous, right?

But I love scones. Not the hard, dry kind - but the soft, crumbly, delicious kind. Whenever I looked up scone recipes, though, it always involved that tricky process of cutting in butter. Which felt intimidating. So I never made scones myself, until...


We decided to hold a Ladies' Christmas Tea at our church a few years back. We sold LOTS of tickets, and there would be many, many scones to bake. I didn't do the baking (I sang, because music is more my area) but I sure sampled the goodies! And the scones were so delicious. My friend Grace told me they were easy as could be, and no butter!

And so, Grace shared with me this delicious scone recipe with plain flour and heavy cream. Sugar, baking powder, and a bit of vanilla round out the ingredients.

The process couldn't be easier!

Mix the dry ingredients until well blended.


Add the wet ingredients...

Mix well, and shape into a round about one inch thick.

Brush the tops with cream and sprinkle on some coarse sugar...

And bake!

Simple Cream Scone Recipe


1 3/4 cups flour
3/4 cup sugar
2 1/2 teaspoons baking powder
1/4 teaspoon salt
1 cup heavy cream
1 teaspoon vanilla
Additional cream for brushing
Rough sugar for topping (optional)

Preheat oven to 400 degrees.

In medium bowl, mix dry ingredients until well blended. Measure cream into a measuring cup and stir in vanilla. Add cream mixture to dry ingredients and stir until just incorporated. Add a bit more cream, if necessary, to make a thick dough.

Sprinkle flour on an ungreased baking sheet, and flour your hands well. Pour dough out of the bowl and onto the baking sheet. Press and shape with your hands to a circle about one inch thick.

Cut the dough in half, and then into thirds (triangles). Use a spatula to gently separate the pieces at least an inch apart.

Brush the tops of each piece with heavy cream and sprinkle with coarse sugar.

Bake for 8-10 minutes or until golden brown. Cool on a wire rack.

Cream Scone Recipe Ideas



Your imagination is your only limit with this basic scone recipe! You can create your favorite combinations by adding flavoring, fruit, nuts, chocolate chips... whatever you like! Here are some combinations I have loved:
  • omit vanilla, use 3/4 tsp. almond extract, 1/8 cup sliced almonds, and blueberries.
  • add the grated peel of one lemon and 1/3 cup wild blueberries.
  • omit vanilla, add 3/4 tsp. orange extract, and add 1/2 cup dried, sweetened cranberries.
  • add 1/2 cup mini chocolate chips.
  • add 1/2 cup chopped, dried apricots and 1/8 cup finely chopped walnuts.
  • stir in 1/2 cup chopped, frozen raspberries.
  • add 1/2 tsp. cinnamon to dry ingredients.
